Broccoli and Cheddar Cheese Quiche-Quiche is so easy to make and the combinations are endless!
Please tell me I’m not the only one who will cook/bake something just to justify (and show off) a new baking dish.
It’s finally spring. And the weatherman is promising some spring weather soon. I’m really slack when it comes to doing big Easter baskets for my kids. As long as they get some candy, they’re happy.
This year I used their cereal bowls as baskets and stuffed enough sugar wrapped in cute plastic to put them in comas for a day or two.
And they were happy.
Besides, it’s not like they did’t know I’d be hitting up the day after sales for more candy.
I told the girls where we were going and what we were looking for. And that’s all we were shopping for. I didn’t want to deal with any pouty faces when I had to start saying “no, that’s not what we’re here for.”
First stop Hobby Lobby, had to check out their Easter sales. I found a cute little cake stand and then a new tablecloth for my kitchen table, score! I never left the first few isles. In and out, don’t wander around, that’s how you end up spending way more than you planned.
Next Stop Target. Straight back to the holiday candy. M&Ms, Snickers, Peeps, Jelly Beans, even that cute hand towel pictured above. Now that we have the holiday section out of the way, time for some girl shopping, you know, the clothes, shoes, make-up, other incidentals. Girl stuff.
Score on the shoes, I had 3 pairs for me in the cart but after walking around with them did finally decide on just one pair. The girls found cute shoes too. Wasdisappointedin the spring clothes but Grace did get a cute outfit.
Over by the makeup, while the girls are checking out the nail polish, I spot it. By one of those price checker things. I love theturquoise color! I already have a tart pan but mine has short sides and is a 10 inch. I don’t really need another one.
A quick scan at the price check tells me for $5.00 I can have this baby? I can’t believe whoever left it here, well, left it. Not me, into the cart it goes.
Back at home I have to use it, I have to show off my new tart pan. And it does make a beautiful Quiche.
Ingredients
- 1 pie crust (store bought or homemade)
- 6 eggs
- 1 cup whipping cream
- 1/2 cup finely chopped onion
- 1 tablespoon butter
- 1 cup broccoli florets (fresh or frozen)
- 1-1 1/2 cups shredded Sharp Cheddar Cheese
- Salt and pepper to taste
Instructions
- Preheat oven to 375 degrees.
- Roll out pie crust then lightly press into form of tart pan or pie plate.
- Saute onion in butter for about 5 minutes, Just until softened. If broccoli is fresh, steam until just tender, if frozen, cook just until warmed and defrosted. Toss broccoli with onions.
- Evenly spread broccoli and onions in prepared crust then sprinkle cheese over top.
- In separate bowl combine eggs, cream salt and pepper. With hand mixer, whip for about 1 minute.
- Pour egg mixture over broccoli and cheese.
- Bake for 35-40 minutes until center is set. Remove from oven and let sit for 10 minutes before slicing.
