Melt butter in a cast-iron or other heavy skillet until it sizzles and just short of burning. Pour the egg mix in all at once, cover with a tight-fitting glass lid, and reduce heat to very low. Do not shake pan or raise cover until eggs are set. (Take very quick peeks from the side if you didn't use a glass lid to see if the eggs are done.) Once the eggs are set, add desired fillings and re-cover to heat filling ingredients or melt cheese.

Fold in half and slide onto plate. This method really bulks up the eggs a three-egger easily serves two adults. I add finely chopped tomato and a little frozen corn to the egg mix, and then "stuff" it with salsa and cheese, and garnish with sour cream and avocado for a "Mexican" omelet that's a hearty treat!
